Thanksgiving Menu

Last year I was in a resort kitchenette having a clean, glycemic reduced T day.  So here is the menu from last year.

Organic Turkey – we go organic because of the chemical rich injected solution, as well as the feed used with fowl.  By their nature, turkey typically are more clean as the are harder to cage in farm raised situations, but to be sure, you have to go organic.

No potato Mashed potatoes –  mashed cauliflower has become common inside and outside of the health world.  Using pasture butter (Kerrygold) and garlic as the seasoning, you will never know it isn’t potatoes!

Gravy – you cannot have “potatoes” without gravy!   So how do you thicken gravy without using any grain? Almond flour. Just stir while adding the almond meal.

Flax meal bread – the recipe is in the “Green book” in the office, and when you get good at it, you will be baking fluffy, airy bread with no grain.

Quinoa – this simple grain that acts like a seed is perfect for giving some substance.  Boil, drain, butter and salt!

Mixed green salad – simple.

Cranberry sauce – start with raw cranberries, mash them slightly in a pot, add just a bit of water so that you can stir and heat, add some xylitol to taste (or stevia).

Pumpkin pie – pumpkin pack, eggs, some half and half, cinnamon, cloves and nutmeg And stevia. Almond flour crust made up of almond flour, eggs, stevia, baking soda and powder.

Whipped cream – organic heavy whipping cream with a little bit of sweetener, either stevia or xylitol. Whip.
