Off the Straight 60

Week 8 – The end…

Cheese Cake Recipe

This is a traditional cheesecake recipe that I have altered to fit this diet, the actual ingredients are in ( ). Ingredients: Crumb Crust -I used the chocolate peanut butter cookie dough as my crust 5 – 8oz packs of cream cheese, softened 1 and 3/4 xylitol (sugar) 3 tbsp coconut flout (all purpose flour) Zest of 1 orange Zest of 1 lemon 5 large eggs 2 large egg yolks 1/2 tsp vanilla   Preheat oven to 500 degrees F Beat together cream cheese, sugar, flour, and zests. Week 7 – Goals and Achievements

Its really important to have a goal with anything you do in life. As Dr. Eric talked about during the time management/stress talk, goals help guide everything we do. So having a goal in this diet is really important. My goals for the first straight 60 were to stay strict to the diet for the full 60 days and drop weight as much as I could. Throughout every week I will usually be thinking about this blog and what I plan to write about. It usually helps me stay focused on my goals for my diet. Week 5 – Slippery Slope

Week 3 – Planning

Pizza Crust

Grain/Sugar Free Pizza Crust: 2 cups almond flour 2 eggs 1/2 – 1 cup of Parmesan cheese 1/4 tsp. Italian seasonings 1/8 tsp. garlic powder (optional) pinch of salt 4 tsp olive oil Combine all ingredients together and let rest 5 minutes. Stir dough, it should be as thick as cookie dough, if it isn’t add more almond flour a tablespoon at a time until it is. Week 2 – Support

My wife Amanda and I did our first straight-60 right before starting this one. Eric and his wife Laura were doing it along with us, but other than that, we were pretty much on our own. We are only 2 weeks in, but I can say I prefer doing it with a group. I realize I don’t see the group all the often, and don’t usually eat any of my meals with the group either, but knowing the group is there, others going through it with us, just helps.
