Have We Missed The Point Of The Paula Dean Debate?

Paula Deen has become more publicized despite the possible harm that her foods may have caused to millions of people. Many people are talking about the hamburger donuts, the fact that she withheld information about her diabetes and even that she receives money from pharmaceutical companies. Are we not missing the point?

Yes, she may be a celebrity chef but does that mean she controls what passes your lips?  She might be role model, but when has the life of a celebrity truly been someone to look up to?  She may have had the rag to riches theme behind her, but when money comes into the picture, stars commonly leave you behind.

Deen defended her decision to keep her diagnosis of diabetes secret in order to become educated on the condition.  She was diagnosed with type 2 diabetes in 2008.  Yet another reason not to look to her as a role model; she’s a slow learner.

This is a doughnut burger... not fit for consumption.

Instead of looking to celebrities on how to cook and be healthy, let’s take self-responsibility of our health.  Let’s ensure we do not add ourselves or our children to the 26 million other Americans that have type 2 diabetes.  You may be wondering and saying “that sounds good, but how?!”

Paula may be correct that the condition is not going to kill you tomorrow, but scientific research has concluded that you will cut years off at the end of life, you will die sooner.  The other certainty is that you will be on medications and most likely have complications from long term, chronic type 2 diabetes.

4 Tips to Prevent and Correct Diabetes:

1. Lose weight or ensure you are a healthy weight.

Eating poorly usually adds weight.  If it doesn’t add weight, it doesn’t mean that you are any healthier.  It is common for many of us to think that being skinny means that we are healthy, not necessarily.

2. Get moving, get active.

Any physical activity is going to help reduce your diabetes risk.  Unfortunately, we commonly have more physical activity than our children.  Our children have their recess times cut back, animated movies every other minute and video games being marketing to our 10 year olds between happy meal commercials.  The largest toy manufacturer is now McDonalds; another great role model.

3. Cut and substitute the sugary liquids.

You can cut your risk of diabetes by replacing coffee, soda, fruit juices and other highly refined drinks with more water.

4. Choose healthier foods and control portion size.

Do you eat more fruit or vegetables?  Many kinds of fruit contain high amounts of sugar in comparison to vegetables. Vegetables are a great way to fill you up quickly and they also provide an amazing source of fiber.

High Intensity Exercise Benefits… and reason for pain.

I have often pressed all of you to step up your exercise routine, to push it a little bit harder, and in most cases shorter.  I have given you some reasons, but I want to give you more reasons.  To go beyond the Growth Hormone and the increased leptin sensitivity, and to talk very specifically about lactate threshold.

Next – those other letters after my name, the MS, they are for a masters degree in exercise physiology.  I must say, that I learned a lot of good functional stuff in my masters studies, I learned a lot about lactic acid, and the lactate threshold.  But after all of that classroom discussion, nothing held a candle to actually living it, and pushing it, and learning it based on choice.

So a quick understanding of the lactate threshold (closely tied to the anaerobic threshold) will help.  Basically, you have a point where the blood becomes acidic because the build-up of lactic acid (waste product of cellular respiration – or a waste from utilizing energy).  Reaching this state happens when you are exercising REALLY hard.  It can happen very quickly if you exercise REALLY, REALLY hard, or if you are simply beyond your aerobic capacity for a longer period of time.

Aerobic capacity is the rate at which you can remove lactic acid, and CO2 while delivering ATP and O2.  Better known as VO2 max, it is a measure of how well you can utilize oxygen at highly intense exercise.

OK – now that is out of the way, sorry, I know it is boring.  But here is the kicker, HOW do you improve your VO2 max?  How do you increase your lactate threshold?  Most athletes work to improve their VO2 max by pushing themselves aerobically for hours, and in so doing hope to also gain in their lactate threshold.  But this is actually one of the worst ways to improve your lactate threshold, and only holds up for pushing VO2 max if you are training at an elite level of hours.

If your goal is to simply improve your 5k time, or pick up a step on the tennis court, or really any other sport outside of elite level marathon running, triathlons or elite level cyclists; then you should be pushing these up by pushing to complete exhaustion on short term exercise.  The feeling that you get when you completely cross over into your lactate threshold, is a bit painful.  So ease into it, but when you arrive, you will know it.  If you are wondering if you are getting to that level, then you are not there.  All wondering will be done, when you reach this point!

Let’s go through the physiological changes that take place in high intensity exercise.  You demand more oxygen, so you increase your ability to pass O2 through your lungs into your blood stream, you increase your O2 carrying capacity by increasing the red blood cells in your blood stream, and you improve the ability to pass that blood across capillary beds into tissue.  This also improves the rate that you remove lactic acid, and CO2.

Today I did a workout that took 3 minutes and 12 seconds.  At the end of the workout, my arms would not work.  I started to get really stiff throughout my body.  I cramped a little in my forearms, then after about 5 minutes, everything started to work again.  This workout brought about an increase in O2 carrying capacity.  I had not worked this hard in 3 minutes in awhile, so I realize that I was not at an optimal place for this time domain.

This workout brought about a positive change in the ability to carry O2 and to work at a high level without reaching fatigue.  So the carryover is huge.  If i were to turn out a performance at 70% of my capacity, I could continue that for a very long time because I have improved my lactate threshold and VO2 max from this short 3 minute workout.  But if I need to generate a lot of power over a very short duration, I can do that as well.

Many of you know that I regularly Adventure Race with Andy McCann and whomever else we can find to come join us.  We train in these short bursts, and it fully prepares us to go out and race for 6,9, 12, 24 or more straight hours.  The crossover is incredible.  So please, take advantage of the workout of the week when I post one here, or take that step to try out The Garage.  The gains for your life and health are huge!

And lastly.  Whenever you are sore a day after a workout, or two, or more… this is a process called DOMS (delayed onset muscle soreness).  This is NOT lactic acid.  You would be a very sick individual if your body kept lactic acid in the blood stream at high levels for days.

Going Organic is Getting Cheaper!

The world of organic is getting cheaper!  Which is good news.  First off, I don’t think cheap is the best driver of motivation, because quality and expense tend to go hand in hand in the food world.  However, there are certain foods, that it makes perfect sense to go ahead and go cheap with, and then make up the difference elsewhere.

That being said, I took a shopping trip through BJ’s today, and was excited to see what has transpired there! First I went into the area of the deli meats.  There are few deli meats that I would recommend, though it is nice to actually have a deli sandwich or in my case just a quick piece of deli meat with a piece of real raw cheese!  It was nice to see that Applegate Naturals has their meat on sale for a better price than most other stores.  Biggest problem here, it isn’t organic.

Applegate makes an organic product, but it is not the easiest to find.  I typically buy natural, because Trader Joe’s and Publix carry the natural version, where organic is only found at Harry’s/Whole Foods, or the Natural Food Warehouse, or other specialty food sellers.  The difference, well, there are still chemicals used in the feed of natural poultry.  Just no nitrites, no antibiotics or any hormone.

So as I moved on, I did find some organic products, and that was a great step, as the next thing we found was a large bag of apples.  Now for those about to start on the healing diet, you need to turn your back on the Gala Apples in the picture to the right, but feel free to buy into the Granny Smith apples below that.  My household likes apples, and we buy them organic.  The price of organic apples at BJ’s, versus Trader Joe’s is a pretty good savings.  However, bananas (don’t eat many of these sugar rich treats), were about the same price, if not cheaper at Trader Joe’s.

I found lemons,  and spinach and mixed greens, and some other random items.  All in bulk, so that was good.  NOW, lets address the why we don’t want to buy everything organic from BJ’s.  As you know, organic isn’t our only focus.  We do want clean foods, but just because it is clean, it isn’t necessarily healthy.  And of course, according to the Cornucopia Institute, not all organic is made equal.  And produce is not all that different from dairy or meat farming… differences do exist.

For example, the Local Food Stop vegetables are RICH in nutrient density.  How do I know?  Practice (yeah, I eat a lot).  Seriously, when you have eaten many different vegetables from back yard gardens, and from organic sources via commercial purchases, you get to know the difference between a crop grown in high nutrient environments, vs those grown in overused farm territory.  Local Food Stop has been impressive so far.  I would much rather you find a source like that for your dark greens, than “Organic Girl” spinach and mixed greens.  Cute name… but there isn’t much in a name. Now, that being said, you won’t always be able to buy perfect greens, so buy this cute named box of greens, before a bag of conventional lettuce.

All in all, the shopping excursion was good.  I was able to pickup a 32GB flash drive for $30, which is why I went in the first place, so the convenience of organic grocery shopping, while getting a great deal on technology is hard to scoff at.  So, the last thing I should mention as a parting note, is that my aquaponics garden will start flowing in about one month.  I’ll get the fish in, the fluid dynamics balanced, and we will be experimenting with aquaculture meets super veges all Spring long!  If you have an option, putting one of these in will be well worth it for your health, and your long term budget.

Community Focus/Health Coach Team

What a funny name for a sprout.  The reason, is because I have a dual purpose with this one.  FIrst to share some goals for 2012, and second to share some information with those who have expressed interest in Beyond Organic University.  So if that isn’t you, then just read the first part!

So over the last few weeks, I have been asking you like crazy, “What are your big goals for 2012?  What life and world changing steps are you going to take, and how are you going to serve the kingdom of God?”  These are the questions that I have interest in.  And after hearing many different responses, I know it is time to share some of my own.

I used to engage in a good amount of philanthropy, that has been reduced quite a bit over the last two years, primarily because I have had a pretty significant income change.  I know we are very busy, but we used to average right around 800 patient visits a week, when now that number sits around 600 on our busier weeks.  With job loss, and income loss, many people have cut their care, and ultimately I sponsor and donate less because of it.

I don’t like this.  I feel like I have been given a great talent to serve.  I would argue that we all have, regardless of what you think of your own talents, I feel confident that you too have a talent to serve.  So for 2012, I am looking to grow my gift of my services, and I want your help.  I am looking for non-profit orgs, that support people in difficult situations.  Individuals being rescued from the streets, abuse, etc.  Children without families or homes.  People who could never possibly afford chiropractic, and would likely have no idea of its value.

If you have relationships with groups like this, I want to be put in touch with them.  My goal is to find a way to bring them into the office at those times when we are slow, and to provide free care.  I don’t know how many we can handle, I figure God will take care of that, but I do know that so many of you have shared stories that are miraculous, and I would like the next one to be about one of the most unlikely candidates you could think of.

Beyond Organic University

So many of you have been bringing up the Beyond Organic University Health Coach program.  I wanted to answer some basic questions for you, and help you see what you can and cannot do with that certification.

  • The certification costs $200 for a 40-60 hour course, and access to all materials for one year for up to two people to become certified.
  • Certification teaches you much of what we use and teach in Total Food Makeover and beyond.  The detail is significant, and you are tested on this material.
  • It is not a degree, so you can not pursue degree careers that would be open to dietitians or nutritionists.  I believe the value is more however.  Similar to the fact that we do not use what we learned in school to teach you nutrition, the same applies to those degrees.
  • You can however educate people in one on one settings, and charge for your time.  You can also host makeover events like those that we host, and in so doing charge for the event, or simply distribute products.
  • In either case, you can pursue this as a career, or income to supplement your career, and in both cases I will help you plan your lecture, set up your event, and market.  Community education is what we want to support.

I used to love playing with chemicals. I think it started in elementary school, when my parents gave me Chemistry Kit, though really I ended up thinking it was boring, because it didn’t have
nearly enough experiments for me todo. Ah, that explains it, right?

In Chemistry 101 in high school and again in college, we were guided to perform what was called a pH titering experiment. For this experiment, we were to mix two liquids and to watch for a chemical reaction. We were given one beaker containing colored liquid, and we were instructed to add a second colorless liquid into this beaker, drop by drop. At first, nothing appeared to happen. We added drop after drop and
waited for a change, looking for something, anything to happen! And after some certain magical number of drops, the liquid in the beaker all of a sudden inexplicably changed color.

This, we were told, was the titration point – the point at which you have added just enough to see a change, to make the reaction go. All of the drops added to that point were indeed important, and they were all necessary in sum to push the reaction towards happening, even if you didn’t see a difference in the color of the liquid in the beaker with any of these drops. The titer point was the number of drops, the amount of liquid, that were necessary to produce the magic that was a visible chemical reaction.

You probably know where I’m going with this. Adjustments are like adding drops into the beaker of colored liquid. It takes a certain amount of adjustments to create a shift, to make a big change – and that change may not happen immediately (though we all wish it would), but rather may appear to come out of nowhere, a month or two or more into your care program. In fact, however, this change does NOT come out of nowhere – the shift is only possible due to the sum of the power of the adjustments you have received since starting care. This is the crux of corrective care – to reach that titer point.

When will it come? I never know. I have some good clinical guesses, but some of you reach it sooner, some later. I never know on any given day, is this the one? Is this the day that we will start to tip the balance on your subluxations? Until then, I am happy to add adjustments drop by drop, because I know that once we reach critical mass, the scale will tip and your body will begin to function better than ever.

I’m so thankful for the opportunity to help you all in this way, and that each of you understands that it’s not one adjustment, but rather a series of adjustments that leads to correction of a problem and permanent change. And now, I’ve given YOU a way to explain it to people who don’t understand why it’s important to be under corrective care! Martin Luther King Jr.

What do you know about him?  I site and think that I know too little.  I know I respect everything that I do know about him, but it is so little compared to what I am sure is worth knowing.  As I read about Dr. King I find myself thinking about the passion that he lived his life.  His calling was one that was driven by necessity.

But if you stop and think for a minute about this life that we are living.  Would you not agree that there are problems that exist in our world, right now that necessitate a fix?  Dr. King’s was perhaps worse than anything that we face here in our country, or perhaps it only seems that way because it was on the surface for everyone to see.  The obvious nature of the civil rights affront, pressed him to action.

There is oppression occurring around the world, that is equal if not greater to the racial problems that plagued the US for so many years.  And in these circumstances, the oppression is obvious, and people are in tune with the need to fix a problem.  But what about the more silent problems that surround us.  I will tell you the one that I am against, the healthcare lie that is ruining this country.  I’ll openly talk about this one, but I know you are aware of other problems and I wonder if you are willing to talk about those?

Whether they be related to government specifically, or taxation, or politics, or poverty, or anything else that just happens to get you fired up.  These are issues that need your help, by necessity.  Just like Dr. King was moved to action by necessity, you should be moved as well.  When I read Dr. King, I am absolutely moved by his passionate pursuit of his dream, and realizing full well that God gave him his dream, it only makes sense to pursue it with everything.  To die for it is simply the calling that was necessary.

Is there a dream that you would die for?  On this Martin Luther King Jr. Day, the 26th one since it was established, I would ask you to stop and think about the passion that guided his life, and ask you to consider if there is some pursuit that should be passionately driving you?  Life change, community change, world change… no matter how big or small, if it is your calling, it is worth it!  Be well, be passionate!  –  Dr. E
