I love my Almonds… but…

There is an issue with eating too many nuts.  And it isn’t fat.  But it is actually worse than that.  The question becomes, is there enough evidence to support low consumption of nuts, over high consumption, to warrant a reduction?  I tend to drive people toward nut and seed consumption, but the MYCO-TOXINS that exist in them, might be enough to alter that once you get up to a decent level of daily consumption.

My point is that if we move to the point where we are eating nuts as nut butter, using it as flour for breads, and snacking on mixed nuts throughout the day, you have now bypassed the rule of ancestral potential.  Meaning, without machines, you could not keep up that kind of consumption.  Just like you cannot eat cereal, crackers, pretzels and bread all in one day if you are milling grains without machine.  The point, moderation is key in the area of food, even if healthy.  Fruit, by the way, surely falls into this category.

Monitoring and determination of fungi and mycotoxins in stored Brazil nuts.

Abstract

Brazil nut (Bertholletia excelsa) is an important commodity from the Brazilian Amazon, and approximately 37,000 tons (3.36 × 10⁷ kg) of Brazil nuts are harvested each year. However, substantial nut contamination by Aspergillus section Flavi occurs, with subsequent production of mycotoxins. In this context, the objective of the present investigation was to evaluate the presence of fungi and mycotoxins (aflatoxins and cyclopiazonic acid) in 110 stored samples of cultivated Brazil nut (55 samples of nuts and 55 samples of shells) collected monthly for 11 months in Itacoatiara, State of Amazonas, Brazil. The samples were inoculated in duplicate onto Aspergillus flavus and Aspergillus parasiticus agar and potato dextrose agar for the detection of fungi, and the presence of mycotoxins was determined by high-performance liquid chromatography. The most prevalent fungi in nuts and shells were Aspergillus spp., Fusarium spp., and Penicillium spp. A polyphasic approach was used for identification of Aspergillus species. Aflatoxins and cyclopiazonic acid were not detected in any of the samples analyzed. The low water activity of the substrate was a determinant factor for the presence of fungi and the absence of aflatoxin in Brazil nut samples. The high frequency of isolation of aflatoxigenic Aspergillus section Flavi strains, mainly A. flavus, and their persistence during storage increase the chances of aflatoxin production on these substrates and indicates the need for good management practices to prevent mycotoxin contamination in Brazil nuts.

My takeaway from an article like this, is simply that I commonly overdo consumption, because I get trapped in the world of high fat and low carb.  But I need to be consistent with my pursuit of health.  This is the goal, health.  Not low blood sugar… but health.  My goal isn’t lean body mass, it is health.  So don’t lose sight of the goal!

Garage Games 1

Hello my lovely readers!  I want to implore you to listen (well read) about the fabulous Garage Games 1 Event coming up next weekend (14th-16th).  This is the biggest CrossFit event in the country based on total competitors.  It will be totally awesome, and I want you to come to it!

The greatest thing about this event is the realization of a movement that I started, which is referenced by the hashtag, #BeThe1  This movement is focused on every individual being the superstar athlete who changes the course of history.  Often we celebrate those who are pro athletes, or who are very special or gifted in their field.  When we should be celebrating the everyday.  The “steady as she goes”, and the “I am staying the course”.

The point of it, is that you are the one to be celebrated!  And it comes to life with 900+ competitors who will take to the floor of the competition, battling it out.  But some of these people, will be competing in their very first competition.  Some as beginners… meaning they are true beginners in their sport, or in this case, there will be youths and teens as well!  All being celebrated for their efforts towards health!

And my wife will be the one to get you into a role that doesn’t stress you.  It is an awesome event, wild at times.  But the greatest part, again, is to celebrate the victory of competition with the beginners and youths.

Now, a little background, what is a Garage Games Event, or CrossFit competition?  Well, if you haven’t seen the CrossFit Games on ESPN 2, you are missing out!  This is awesome stuff to behold.  Individuals and teams given tasks to accomplish… set amounts of work, and they race to do it.  For example, a team has to accomplish 100 thrusters with a barbell, 100 kettlebell swings, 100 burpees with a wall ball throw.  And 60 Muscle ups (the thing that male gymnasts do to go from beneath the rings, to on top of the rings).  They will do it fast, with intensity, and there will be hundreds of people cheering them on.

I started The Garage Games with my three partners in The Garage – A CrossFit Gym, 5 years ago.  And we have grown to the number one CrossFit Series of competitions in the country, with over 150 events in 2013, and a plan for 170+ in 2014.  This is an outlet for my creativity, and my message of health.  And will eventually be the thing that lets me tell many people, about the value of chiropractic.  So please, please, please come and be a part of this event!  Thanks for reading, Be Well and Be Blessed! – Dr. E

 

 

Superbowl Schmuperbowl

HA!  As if I don’t care about the superbowl.  But I got your attention, did I not?  Depending on what “faith” you are, you just thought either “huh, Dr. Eric isn’t a real American”, or you thought “I knew he was as intellectual as me”!

But the point that has to be made isn’t so polarized.  The point is simply that there is a cultural drive towards things like a superbowl, that if you do not guard yourself, they will take you down the wrong path.  A good example, is the cultural view of the superbowl food.  If you stuck with the guacamole, and homemade salsa, and skipped the usual chips (corn chips – typically made from typical corn, which in the world of a Publix or Kroger supermarket is a GMO Corn).  You need to get something from the organic section in most cases, or head off to Trader Joes or Whole Foods to overcome that concern.

How about the beer?  Did you ever read the beer post on the Food Babe’s page?  She has done some good research on this.  I imagine her home looks like a fanatical home, but she publishes good work because of it!  So if this is correct, should you be drinking any mega beer, or large scale manufactured beer?  Definitely not, but be sure to like their commercials 🙂

The culture is a mess.  It is there to sell you whatever, and to lure you into trusting it because the FDA exists.  So simply because there is an FDA, we assume that they are looking out for us.  “How could it be sold if it was bad for us?”  Because the FDA is in need of cash just like anyone else.

“The thing that bugs me is that the people think the FDA is protecting them. It isn’t. What the FDA is doing and what the public thinks it’s doing are as different as night and day.” – Dr. Ley, Former Commissioner of the FDA

This quote from Dr. Ley says it all, that when we pursue anything out of the simple perspective that it cannot be “that bad”, we are foolishly running towards destruction.  I have seen it all too many times, up real close and personal.  And it isn’t pretty.

So now as I watch some of these commercials, I am thankful for the creativity of so many people, but I think of the purpose behind so many.  Sell a beer, or a Coke, or a car, or who knows what in some of these, and I cannot help but feel like we are a dying people.  Dying faster than we are living, because our culture is broken.  I want to fix it, but I don’t have the ability to do that.  You do however.

The same reason we are in this mess… all of our decisions, is the same way we get out of this mess… all of our decisions.  Lets continue to enjoy the things that don’t harm us, but lets safeguard ourselves against those that do.  I have nothing to gain, I just want to see less disease.  Period.  No strings attached.  So now that we are at halftime, I am going to go get a Pepsi and enjoy the show.  Kidding.  No Pepsi here.

Atlanta Snow Day

It often takes an event like Tuesday to get deep, to get to the inner layers of a community.  The essence, or the fabric, that binds individuals together.  Time and time again over history, we see the unity the comes from the impact of tragedy.  Strangers who are immediately turned into companions with the common goal of overcoming the difficulties at hand.

This kind of unity transcends so many boundaries.  It is the kind of thing you need to have happen once and awhile.  Just to keep us honest with ourselves.  I was in downtown Woodstock having a meeting at Copper Coin.  My brother (Dr. Mark) and I left the coffee house at 1:11pm.  Drove down Arnold Mill Rd until we got to the Bark Station, just past the firehouse where we came to a standstill.  3 hours later we made it into the parking lot of The Kings Academy, where we parked for the night.

I must say, witnessing the traffic build on 92 and 575 made me grateful we were so close to home (6 miles).  So we parked the car and hoofed it to my neighborhood.  Along the way I was able to make some observations.

First – nobody stopped to ask me and my brother if I needed a lift.  I was shocked that it never happened, but when I reviewed the picture of myself with him that my wife took when we got home, I realized I wouldn’t have picked me up either!

Honestly, it wasn’t a big deal, as we probably looked like we had it under control.  I say this, because I forced my brother to run/jog for many sections.  It was worth it, get the heart rate up, and increase warmth.  Our toes both felt fine throughout, which is often the big issue.

I heard one guy in a truck, absolutely screaming in disgust at a man driving too slow, and too cautiously.  As a 24 year veteran of the Northeast, I will attest that there is a minimum speed that should be maintained most of the time, and there are many people in this area who don’t know that rule… but to yell in frustration, during this… awful.  So fortunately, the other observations that were made.

  1. There was a significant number of people willing to take us in.  Along the way, I was offered a place to stop, stay, eat, etc.
  2. Unlikely hero’s exist – I had a high school girl on a four wheeler offer to help us, until she heard how far we were going, but that’s cool that she was willing to help!
  3. We walked past people, and had people pass us coming towards us.  Though I initiated the conversations, they surely happened easily.   Everyone wanted to talk, it was like this common thread was enough to make us all good friends.

And so the more important observations… the ones from around the city.

  1. Restaurants, gyms, movie theaters open their doors to anyone who straggles in, giving warmth, and sometimes food with no request for anything in return.
  2. Homes were opened up to complete strangers to spend the night.
  3. Restaurant managers stood by the road handing out free food to crawling traffic.
  4. People took multiple trips back to the same buildings/schools to rescue people, and get them to safety.  And in many cases, these trips were taking two hours to complete.

All in all, the pros win over the cons.  The Atlanta people are generally very good hearted people in the face of this kind of adversity… it is good to see.  And they step up to the aid of others in need.  My only concern, and it might be a small one, is why do we look so different in crisis than in everyday?  

Does it really take an event of this magnitude to rally a city behind fair and loving treatment?   We are going to be pushing the edge on loving and living.  We hope you will partner with us to help inspire more similar action, all the time.

Maximized Living SHOUT!

Well, where to start?  It is always such an inspiring weekend when we go to the Maximized Living training.  I think the biggest question going into the day was what would I make my staff do?  Many of you had been hearing the stories of a couple years ago when I took the staff to Orlando for the Max Living conference (we should be there twice a year on average).  So what in the world is a Maximized Living conference?

A collaboration of a group of chiropractors, who like me, believe that the key to saving the planet, is to first save the planets health.  To follow God’s plan to gain the highest level of function possible.  Because ultimately, if we are to do God’s will, His good and perfect will, we need to be in the state: closest to His plan.  When we come together as a group of like minded professionals, and we discuss the stories of healing, and the different directions to get there, it is simply amazing.

My time in my own office is enough to amaze me.  I wish all of you could have been there for all the stories over the years.  The seizures that have ended, the women who have gotten pregnant when they were told they couldn’t, the cancer that was reversed when it was said to be impossible.  The endless pages of people off their thyroid meds, their blood pressure meds, their anti-depressants.  It is really awesome to be such a unique little part of God’s huge plan.

Well, back to the opening paragraph.  The stories from the last one we went to, are true… yet sometimes sensationalized, not to unlike someone telling the story of spotting Big Foot in the woods… obviously something happened, but was it exactly what they think?  So that is how I “spin” the workout from 2012.

We were driving home, and we stopped and grabbed a bite to eat.  After which, and the time to simply get out of there, we had an ETA of close to 3AM.  But…. I wanted to do some team building.  So at nearly 3AM, I alerted my sleepy (and most were waking up from sleeping) staff, that we were heading to the gym.  The Garage to be exact.

Well, the results were awesome.  Angel was pleased that she had found a new level of drive, Dr. Levi was astounded that he could be so slow moving, and Loree simply wanted to kill me.  We worked hard, and eventually, everyone was a little stronger because of it.

Well, I know they were curious what I might have in store for them this year.  So as I racked my brain on Saturday, getting ready for the drive, I kept coming back to the notion of roadside burpees.   So even though we didn’t do them exactly roadside, we did do burpees, and we did them with purpose.  Which was the goal.

Now, you might wonder, why do I make my staff work out (this year, as you can see in the video, it was actually only 10:15pm) on our way home from these conferences?  Well.  Simply to push ourselves when we think pushing needs to be over.  And this is why.

The world is hurting.  The world is dying prematurely. People are being barbarically hurt by medications that should not be on the market.  I would argue that nearly 60% of the medications on the market NEVER have a place.

This message is tiring.  We are working against more marketing, more dollars that are indoctrinating (med school grants, scholarship funds, etc), and more cultural push than any other wrong perpetrated on a people, that I can see historically.  The sheer dollars supporting the expansion of meds is incredible.  If we are to be successful in our mission, we need to do be successful in our training.  Because we need to be strong.  Stronger than the next person who comes by preaching the cultural way.  I appreciate you, please take this moment to think about someone who we could help.  Now reach out and invite them… tonight is the intro (Foundations I) to the 60 Day Turnaround.

Nutrition Q&A

1- Q: I am trying to minimize my cravings for sweets…..any suggestions? 

A: The Advanced Plan does exactly that.  You will find that about 2-3 weeks into the plan, cravings go from a 10 to a 0!  By eliminating the sugar and anything that turns to sugar, you are flipping your body’s switch into fat burning mode.

2- Q: What do you think of the safflower diet 

A; Commercial safflower oil is typically polyunsaturated which are very unstable and highly vulnerable to oxidation- even at room temperature.  This means the formation of free-radicals.  Just being exposed to air and light accelerates the oxidation process.  When you start heating it for cooking, the oxidation progresses even further.
The best oils to use for cooking are coconut oil, butter, and grapeseed oil

3- Q: Can I get enough fiber on the advanced plan if I cut out fruits, grains, beans, etc. if I one has digestive issues? 

A; Absolutely- you will get plenty of fiber from vegetables.  Digestive issues can have many root causes but the Advanced Plan works wonders for allowing the body to heal and to correct problems with digestion.

4- Q: Can I still have a vacation meal as Dr. Lerner suggests on the Undiet from the Body by God book and still have success with weightloss? 

A: While this is perfectly acceptable under normal circumstances and for long term sustainability, it is not effective for weight loss.  Unfortunately, if you want to be as successful as possible, you will need to avoid the vacation meals until your weight loss goals are achieved.  When you are trying to get your leptin under control, it is crucial to eliminate sugars and anything that turns to sugar.  Sugar is highly addictive and causes an immediate physiological response in the body- you can avoid it for a month but as soon as you have that “vacation meal” the cravings come right back in full force.

Dr. Eric: We have found that there are more yo-yo issues with those who fall off the wagon.  And ultimately, those who have been consistent for 6-8 months get life change.  The one simple truth, when you get out 6-8 months, and look back.  Whether you did it or didn’t do it, you will wish you had.

5- Q: In the Asian lettuce wraps recipe in the Nutrition Plans book, do you add the almond butter to the ground turkey? 

A: You can add the almond butter after the ground turkey is browned – with the rest of the  ingredients.

6- Q: What do you say to people who don’t do a Maximized Living Diet, yet live a very long healthy life?

A; There is one very important health risk factor that is often overlooked which is how a person’s nervous system is functioning.  That is why you can see a person with a terrific diet who exercises all of the time, die of a heart attack at age 40 and someone who smokes, eats poorly, and never exercises live to a ripe old age.  Much of the so-called mystery can be boiled down to how well their body is able to function and heal.  Your Maximized Living Doctor can give you much more information on this topic.

7- Q: What about the Flat Belly Diet? 

A: While the idea of a MUFA (mono-unsaturated fatty acid) at every meal is a good one and it is good that this diet focuses on organics- it also overlooks several important points.  There are no recommendations about the type and quality of meats you are eating and there is still a heavy emphasis on carbohydrates which does nothing to get someone’s  leptin under control.

Dr. Eric : In the 60 Day Turnaround, we take it one step further, as we drive all meals to be healthy, not just on the diet.  This is so far beyond culture it is ridiculous.

8- Q: Can you offer an opinion regarding Agave nectar?

A: Agave nectar, while much lower on the glycemic index scale, meaning it doesn’t spike blood sugar as much, IS still sugar and has the same effect on the body.    It will still cause a rise in blood sugar, insulin, and the body’s inflammatory response.  That is why we recommend staying away from it, especially if weight loss is a concern.

9- Q: I cannot have soy and it is in everything!!!  What is soy lecithin and why is it in everything?

A;  Maximized Living agrees that soy is a food that needs to be avoided, in any form.  Soy lecithin is a waste product from the processing of soy oil and yes, it is in almost every processed food out there.   Your best bet is to stick with whole foods or foods that have been minimally processed.

10- Q: Isn’t grapeseed oil another healthy fat? 

A: Yes- grapeseed oil is fine for salad dressings or for medium heat.

11- Q: Is the info on saturated fats in the book: MLNP book?  I just had a girfriend tell me sat fats are bad for you.  I want to pass along this info. 

A: YES!  All of the information you need on the lies we have been told about saturated fats is in there.  The saturated fat phobia has really compromised the health of North Americans.

12- Q: So the Promise Spread that is endorsed by cardiologists, is bad? 

A;  YES!  It is a man-made product, made in a lab, subjected to extensive processing, bleaching, heat, etc.  It is best to stick with the natural foods that have been around for 1,000’s of years like coconut oil, butter, olive oil, etc.

13- Q: So with cutting out sugar…are you really wanting us to stop eating fruits??? 

A: If weight loss is a concern, leptin is disregulated, or the body is in crisis mode, the answer is YES.  That is not to say that fruits are not healthy – they are!  It is just that when the body is in crisis or weight loss is a concern, all sugar must be eliminated to help the body heal and repair.

14- Q: Are you saying that increased healthy fat intake will not increase breast or prostate cancer risk? 

A:  Yes.  In fact, if you look at cultures like Polynesia where they eat very high amounts of saturated fats from coconut products or at some African tribes that eat up to a pound of fat per day, you will not see breast cancer, prostate cancer, or any cancer for that matter.  Fat is actually the #1 missing ingredient in most American’s diets.

15- Q: What do you replace grains with? 

A: You are replacing grains with more healthy fats and more vegetables.  After the first 2-3 weeks, you won’t even miss the grains.  In addition, the human species survived for thousands of years before the advent of farming and milling grains.  In other words, you do not need grains to survive and attain optimal health.

16- Q: What is a good breakfast without grains?

A:  Good breakfast options without grains include:  eggs, nut butters, smoothies, whey protein, organic yogurt, raw vegetables, smoked salmon, grainless (nut-based) granolas, berries with coconut milk, etc.

17- Q: How do you replace pasta? 

A:  One good “trick” is to use a spiral slicer on zucchini- it comes out looking just like spaghetti noodles.

18- Q: I thought 100% whole grains were good to eat 

A: Whole grains can be good for some people but it really depends on your ancestry.  Some cultures were never designed to eat grains.  That may explain the very high level of gluten and wheat sensitivities.  If weight loss is not a concern, and you are not facing any health challenges, whole grains can be a healthy part of your nutrition plan.  The Core Plan outlines which grains are  recommended.

19 – Q: What are the 5 purposes of the Advanced Plan? 

  1. Burn fat
  2. Detoxify
  3. Reduce inflammation
  4. Balance hormone
  5. Repair tissue cells

20- Q: How can you control the ratio if fats are coming in outside of the supplement, ie through your diet? 

A:  If you are consuming only healthy fats, there is no need to monitor your fat intake.

21- Q: Is there any soy in NaturePro?

A:  NO!  Maximized Living does not recommend consuming soy (except for organic fermented soy products like tempeh, miso. Tamari, amakaze, and natto)

22- Q: What do you mix with Nature Pro? 

There are several smoothie recipes in the book that use NaturePro but some quick ideas are:
Vanilla NaturePro with frozen berries and coconut milk
Chocolate NaturePro with romaine lettuce, coconut milk, and mint flakes
You can add greens to any smoothie for added  nutrition.

The possibilities are really  endless.

23- Q: I have not been able to obtain grass-fed beef this winter at my organic grocer – is organic beef okay to buy? 

A: Organic does not necessarily mean grass-fed.  It just means that the animals haven’t been given hormones or antibiotics.  You can find some online sources of grassfed beef that will come directly to your house.
